Been using gas for quite a while, it is easy, convenient and does OK.....or was...
The new neighbours are big time into BBQ and damn good at it...bar the fact they whack on the slow smoker/cooker at 8am so by lunch we're going nuts in anticipation. The output is beyond yummy, way way beyond.
Mid week some beef cheeks and other such yummys arrived fresh out of the smoker, a few of us damn near needed to go 'find a room'.
Last evening over a cold bevvie they fired up the little fella and 30m later we had spectacular chook nibbles. The dust (like a rub but with out the rubbin) plus the smoke......holy crap they were arguably the best I've ever chowed down on.
So with all this a month or so back I commissioned a over sized charcoal chimney for the farm and stocked up on a range of charcols. It's going to be perfect as non-gas fired BBQ for me and the Wa plus when we're done coking it'll be a magnificent Brassier. We have a few dead and now very well seasoned trees to remove so lots of good wood to feed the beast.
I also have a std sized chimney for a small old school wood BBQ that's been sitting under the shed for decades. Now I've been shown how super easy, tidy and tasty using charcoal can be our gas BBQ is now redundant.
Yet another thing where I find old school still trumps newer.

Agree that a BBQ is best treated as an occasion not simply a means to cook food - making the time & effort of traditional worthwhile.
Probably won’t take off in the time-poor burbs though.

I dunno. These days getting a solid fuel BBQ to cooking speed can happen very quick. The lads yesterday had it up and running in less than 10mins, mind you they are heavily experienced. But watching then means I'll not be much longer now.
Suss charcoal chimneys, they get the fuel ready to cook in minutes, it's noting like the old days of newspaper, twigs and everyone totally shitfaced by the time things are at cooking temp.
We'll be taking our small one away on the boat. If I can find some 'insulating' sheet to keep the heat away from the structure I'd use it in the cockpit.

The problem arrises in areas'like Marlborough, where open flame BBQ's re now banned. We can only use Gas, full stop.
You can make Gas a little better by having Rocks or ceramic stones over the Gas. The difference with the charcoal is the infra red dry heat it creats. The Rocks etc are not perfect, but do go a long way to producing a much beter type of heat.

Gas fires don't have a flame in the South Island. That's bizarre, they all do up here in the North Island

Hahaha, it's Council remember. We are not even allowed wood fired Brasure's(spell?) here. But that is because within the Town area, the new smog rules prevent the operation if Brasures and old log burners. Only new clean air approved wood burners are allowed to be operated.

Yeah I was gobsmacked to hear that parts of the S Island have the worst air quality in NZ - in fact scoring right up there on some of the global measures of bad quality. 😳

Braziers
Here's my small one, it;s 250mm odd high 200odd arccos and highly portable. So for the farm I commissioned a bigger one which is 600 high by 400mm across. It'll be our BBQ then whip off the top plate and we have a awesome brazier.
All NZ made out of 1.5 and 3mm stainless Attachments:

All NZ made out of 1.5 and 3mm stainless I hope you used food grade stainless for the top, 304/316 are not healthy for you when heated like that

Yes 304 and 316 are OK for that. The main issue is how well they handle such heat. You will find they will both rust eventually. They use a very special SST for high heat applications. 309 and 310 are the most common. However there are many others and it depends on what the primary use is at highly elevated temps, which then determins what kind of SST is used. 304 is considered food grade. It is the most common material for bench tops and sinks and bowls etc. However, it is food grade mainly for other reasons than health. In fact the question did arise many years ago, "Is any SST healthy (and at room temps) due to the Crommium in it. It was never answered.
